Chicken Fingers with Honey Mustard Dipping Sauce
Everyone loves these- adults and kids alike! No one will ever guess that these crispy chicken fingers are high in fiber!
1 lb chicken tenders
4 egg whites
6 slices GG Bran Crispbread
¼ tsp salt
¼ tsp pepper
½ tsp garlic powder
1 ½ tsp paprika
2 tablespoons sesame seeds.
Preheat oven to 475 degrees.
- Pat chicken dry with paper towel
- Place 6 slices of GG Bran Crispbread, salt, pepper, garlic powder and paprika in a food processor and process until the cereal has a fine, bread-crumb consistency. Transfer the mixture to a shallow dish.
- Whisk egg whites in another shallow dish. Add sesame seeds and mix to combine. Add chicken tenders and turn to coat. Transfer each tender to the cracker mixture and turn to coat evenly.
- Place the chicken tenders on a baking sheet (sprayed with cooking spray)
- Bake the chicken fingers until golden brown and crispy and no longer pink inside for about 20-25 minutes.
For the Honey Mustard Sauce
1 ¼ cup fat-free mayonnaise
¼ cup Dijon mustard
1/3 cup Splenda
4 tablespoons water
¼ tsp. salt
2 teaspoons Fiber sure
Combine all ingredients and chill until ready to use.

Blueberry-Peach Crisp
You don’t have to feel guilty eating dessert when it’s filled with fruit and topped with fiber! Serve this with a dollop of fat-free Kool Whip or a scoop of fat-free vanilla yogurt for a real treat!
Fruit:
4 cups sliced fresh peaches or frozen peaches, thawed
3 cups fresh blueberries
1 tablespoon lemon juice
1 tablespoon flour
¼ cup Splenda
Topping:
¼ cup firmly packed brown sugar
¼ cup quick-cooking oats
2 slices GG Bran Crispbread, ground
2 tablespoons chopped almonds
½ teaspoon cinnamon
Pinch of salt
2 tablespoons butter
- Preheat oven to 350 degrees F
- Place peaches and blueberries in a bowl and toss with lemon juice, flour, and Splenda. Place in an 8-inch square baking dish.
- In a food processor, grind the GG Bran Crispbread until they have a fine, bread-crumb consistency.
- In a small bowl, combine the ground Crispbreads and the rest of the topping ingredients except butter. With a fork, cut in butter until the mixture is crumbly. Sprinkle topping over fruit.
- Bake for 30 minutes until golden brown and bubbly.
